In an attempt to cope with a similar invasion of nasty animals for many of us, gastro therapist Mi Pederson of the University of Southern Denmark created a new method of drying jellyfish to such an extent that they are very similar to ordinary potato chips.

“In fact, there is nothing new in eating jellyfish,” says Pederson. - This is an old tradition, which in Asia has more than 1000 years. Jellyfish is a delicacy, believe it or not. I researched how to turn a slimy jellyfish into a crisp chip. ”

Danish method involves placing jellyfish in alcohol, which, in turn, extracts water from the animal.“For a couple of days, alcohol replaces the water in the jellyfish,” says Pederson. - ... Water is extracted from it and its volume decreases. After we let it evaporate, we get a crispy chip that we can eat. ”

Traditional methods of drying jellyfish that use salt and alum to extract water give a less attractive texture, and it also takes up to 30-40 days.
Not only does the new method speed up processing, it can make jellyfish more attractive to Westerners. “Taste and aesthetics, in particular, have a gastronomic potential,” says Pederson.
